Monkey Munch Bites

Ingredients
For the Crust:
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup unsalted butter, melted
For the Filling:
- 1/2 cup creamy peanut butter
- 1/4 cup honey
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon vanilla extract
Instructions
Make the Crust:
- In a large bowl, whisk together cornmeal, flour, sugar, salt, and baking powder.
- Add melted butter and mix until just combined. Be careful not to overmix!
- Cover mixture with plastic wrap and refrigerate for 10 minutes.
Prepare the Filling:
- In a separate bowl, cream peanut butter and honey until smooth.
- Stir in apple cider vinegar and vanilla extract.
Assemble and Bake:
- On a lightly floured surface, roll out crust mixture to about 1/4 inch thickness.
- Use a cookie cutter or glass to cut out shapes. You can also make squares or rectangles if you prefer!
- Place 1 tablespoon of filling in the center of each shape.
- Fold dough over filling and press edges together to seal.
- Bake at 375°F (190°C) for 12-15 minutes, or until golden brown.
Serve and Enjoy!
- Allow Monkey Munch Bites to cool on a wire rack for 5 minutes before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
