Monkey Munch Bites

A fun and easy snack for kids, featuring crispy cornmeal bites filled with a sweet and tangy monkey-themed filling.

Ingredients

For the Crust:

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup unsalted butter, melted

For the Filling:

  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon vanilla extract

Instructions

Make the Crust:

  • In a large bowl, whisk together cornmeal, flour, sugar, salt, and baking powder.
  • Add melted butter and mix until just combined. Be careful not to overmix!
  • Cover mixture with plastic wrap and refrigerate for 10 minutes.

Prepare the Filling:

  • In a separate bowl, cream peanut butter and honey until smooth.
  • Stir in apple cider vinegar and vanilla extract.

Assemble and Bake:

  • On a lightly floured surface, roll out crust mixture to about 1/4 inch thickness.
  • Use a cookie cutter or glass to cut out shapes. You can also make squares or rectangles if you prefer!
  • Place 1 tablespoon of filling in the center of each shape.
  • Fold dough over filling and press edges together to seal.
  • Bake at 375°F (190°C) for 12-15 minutes, or until golden brown.

Serve and Enjoy!

  • Allow Monkey Munch Bites to cool on a wire rack for 5 minutes before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
