Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh oregano
- 1 tablespoon chopped fresh parsley
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Yogurt Dip:
- 1 cup plain Greek yogurt
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh mint
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
Instructions:
- In a medium bowl, whisk together the olive oil, lemon juice, oregano, parsley, garlic, salt, and pepper. Add the shrimp and toss to coat. Marinate for at least 30 minutes, or up to overnight in the refrigerator.
- Preheat your grill or broiler to medium-high heat. Thread the marinated shrimp onto skewers.
- Grill the skewers for 2-3 minutes per side, or until the shrimp are pink and cooked through.
- While the shrimp are grilling, prepare the yogurt dip. In a small bowl, combine all the dip ingredients and stir well. Taste and adjust seasonings as needed.
- Serve the grilled shrimp skewers immediately with the lemon-herb yogurt dip.
