Instructions:
- Preheat your oven to 325°F (165°C). Line an 8x8-inch baking dish with parchment paper.
- Prepare the graham cracker crust by blending the crumbs, sugar, and softened butter until well combined. Press the mixture into the prepared baking dish.
- Bake the crust for 10-12 minutes or until lightly browned. Allow it to cool completely.
- In a blender, combine the eggs, vanilla extract, cream cheese, white chocolate chips, and matcha powder. Blend until smooth.
- Pour the cheesecake mixture over the cooled crust and bake for 25-30 minutes or until set.
- Allow the cheesecake bars to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
- Once cooled, dip the ladyfingers into coffee liqueur for at least 5 seconds on each side. Arrange 3-4 soaked ladyfingers on top of the cheesecake mixture and repeat this process until all ingredients are used up.
