Matcha and White Chocolate Tiramisu Cake

Ingredients
For the cake:
- 2 1/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3 teaspoons matcha powder
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup whole milk, at room temperature
- 2 large eggs
- 1/2 cup vegetable oil
For the white chocolate buttercream:
- 1 cup (200g) unsalted butter, softened
- 4 cups confectioners' sugar
- 1/2 cup white chocolate chips
- 2 tablespoons milk or heavy cream
For the matcha syrup:
- 1 cup granulated sugar
- 1 cup water
- 2 teaspoons matcha powder
Instructions
Make the cake:
- Preheat your oven to 350°F (180°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together flour, sugar, matcha powder, baking powder, and salt.
- In a large bowl, using an electric mixer, beat the milk, eggs, and oil until well combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Divide the batter evenly among the prepared pans and smooth the tops.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 5 minutes, then transfer them to a wire rack to cool completely.
Make the white chocolate buttercream:
- In a large bowl, using an electric mixer, beat the butter until creamy.
- Gradually add the confectioners' sugar and mix until smooth and creamy.
- Melt the white chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
- Allow the melted white chocolate to cool slightly, then fold it into the buttercream mixture.
Make the matcha syrup:
- In a small saucepan, combine sugar and water over medium heat, stirring until the sugar dissolves.
- Remove from heat and whisk in the matcha powder until well combined.
Assembly
- Place one cake layer on a serving plate or cake stand.
- Brush the top of the cake with some matcha syrup.
- Spread a thick layer of white chocolate buttercream on top of the cake.
- Repeat the process with the remaining two cake layers, ending with a layer of buttercream on top.
Decoration
- Sprinkle matcha powder over the top of the cake for a decorative touch.
