Matcha and White Chocolate Tiramisu
Ingredients
- 12-16 ladyfingers
- 1 cup of strong brewed coffee
- 2 tablespoons of unsweetened matcha powder
- 8 ounces mascarpone cheese
- 1/2 cup confectioners' sugar
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips, melted
Instructions
Prepare the Coffee Syrup
- In a large bowl, whisk together coffee and matcha powder until well combined.
- Set aside to cool.
Make the Mascarpone Mixture
- In another large bowl, combine mascarpone cheese, confectioners' sugar, and vanilla extract. Mix on medium speed with an electric mixer until smooth and creamy.
- Stir in the cooled coffee mixture.
Dip Ladyfingers
- Dip ladyfingers into the coffee mixture for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
- Place them in a large serving dish, cutting some of them to fit the edges of the pan.
- You can trim any excess ladyfinger as you go.
Make the White Chocolate Mousse
- In a separate bowl, whip heavy cream until stiff peaks form. Set aside.
- In another bowl, melt white chocolate in the microwave for 30 seconds at a time, stirring between intervals until smooth and creamy.
- Fold the melted white chocolate into the whipped cream.
Assemble Tiramisu
- Spread half of the mascarpone mixture over the ladyfingers.
- Top with half of the white chocolate mousse.
- Repeat this process: layering the ladyfingers, mascarpone mixture, and finally the remaining white chocolate mousse.
- Cover the dish with plastic wrap and refrigerate for at least 3 hours or overnight.
Serve
- Slice and serve.
