Introduction

These delicate matcha-green macaron shells are the perfect accompaniment to a rich white chocolate ganache. The bitterness of the green tea is balanced by the sweetness of the white chocolate, creating a harmonious flavor combination that will delight your senses.

Ingredients

For the macaron shells:

  • 1 1/2 cups (190g) almond flour
  • 1 1/2 cups (200g) confectioners' sugar
  • 3 large egg whites
  • 1/4 cup (60g) granulated sugar
  • 1/2 teaspoon matcha powder

For the white chocolate ganache:

  • 1 cup (250g) white chocolate chips
  • 1 tablespoon (15g) unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

Preparing the macaron shells:

  1. Sift together almond flour and confectioners' sugar.
  2. In a separate bowl, whip egg whites until frothy.
  3. Add granulated sugar to the egg mixture and continue whipping until stiff peaks form.
  4. Fold in matcha powder.
  5. Gradually add sifted almond flour mixture to the egg mixture and mix until well combined.

Preparing the white chocolate ganache:

  1. Melt white chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval.
  2. Remove from heat and stir in softened butter and vanilla extract until smooth.

Assembly and serving:

  1. Spoon small amounts of macaron mixture onto a parchment-lined baking sheet, leaving about 1 inch (2.5cm) space between each shell.
  2. Tap baking sheet gently to remove air bubbles and let shells sit at room temperature for 30 minutes to an hour to form a skin.
  3. Bake in preheated oven at 300°F (150°C) for 15-20 minutes or until the tops are firm to the touch.
  4. Allow macaron shells to cool completely on baking sheet before filling with white chocolate ganache and serving.

  • To ensure even baking, it's essential to tap the baking sheet gently after piping the shells.
