Matcha and White Chocolate Croquettes with Green Tea Ice Cream

Ingredients
For the Croquettes:
- 1 cup (120g) all-purpose flour
- 1/2 cup (60g) matcha powder
- 1/4 cup (50g) confectioners' sugar
- 1/4 teaspoon salt
- 1/4 cup (55g) unsalted butter, softened
- 1 large egg
- 1 tablespoon white chocolate chips
For the Filling:
- 1 cup (200g) white chocolate chips
- 1 tablespoon matcha powder
For the Green Tea Ice Cream:
- 2 cups heavy cream
- 1 cup granulated sugar
- 2 teaspoons matcha powder
- 2 tablespoons green tea leaves (or 1 teaspoon matcha extract)
Instructions
Make the Croquettes:
- In a medium bowl, whisk together flour, matcha powder, confectioners' sugar, and salt.
- Add softened butter and mix until the dough comes together.
- Beat in egg and white chocolate chips.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- On a lightly floured surface, roll out the dough to about 1/4 inch (6mm) thickness.
- Cut into desired shapes using a cookie cutter or a glass.
- Fry the croquettes in hot oil until golden brown and crispy.
Make the Filling:
- Melt white chocolate chips in a double boiler or in the microwave in 10-second increments, stirring between each interval until smooth.
- Stir in matcha powder.
Make the Green Tea Ice Cream:
- In a medium saucepan, combine heavy cream, granulated sugar, and matcha powder.
- Whisk constantly over medium heat until the mixture comes to a boil.
- Remove from heat and let steep for 10-15 minutes with green tea leaves or add matcha extract.
- Strain the mixture into an ice cream maker and churn according to manufacturer's instructions.
Assemble:
- Serve croquettes warm or at room temperature with a scoop of green tea ice cream on the side.
