Matcha and White Chocolate Crème Brûlée Biscotti

Introduction

These biscotti are a unique twist on the classic Italian cookie. The addition of matcha powder gives them a bright green color and a subtle grassy flavor, while the white chocolate crème brûlée filling adds a rich and creamy element.

Ingredients

For the biscotti:

  • 2 1/4 cups (285g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon matcha powder
  • 1 tablespoon almond extract

For the white chocolate crème brûlée filling:

  • 1 cup (200g) white chocolate chips
  • 1/4 cup (60g) granulated sugar
  • 2 tablespoons heavy cream

Instructions

Preparing the biscotti:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, use an electric mixer to beat the sugar and eggs until light and fluffy.
  4. Add the matcha powder and almond extract to the wet ingredients and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  6. Wrap the dough in plastic wrap and let it rest for 30 minutes.
  7. On a lightly floured surface, roll out the dough to about 1/4 inch (6mm) thickness.
  8. Cut the dough into long, thin strips, about 1 inch (2.5cm) wide.
  9. Place the biscotti on the prepared baking sheet, leaving about 1 inch (2.5cm) of space between each cookie.
  10. Bake for 15-20 minutes, or until golden brown.

Preparing the white chocolate crème brûlée filling:

  1. Melt the white chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  2. In a small bowl, whisk together the granulated sugar and heavy cream until well combined.
  3. Stir the sugar mixture into the melted white chocolate until fully incorporated.

Assembling the biscotti:

  1. Once the biscotti are completely cool, use a serrated knife to slice them in half horizontally.
  2. Spoon about 1 tablespoon of the white chocolate crème brûlée filling onto the bottom half of each biscotti.
  3. Top with the top half of the biscotti.

Tips and Variations

  • To enhance the matcha flavor, you can add a few drops of green tea extract to the biscotti dough.
  • If you prefer a stronger white chocolate flavor, you can use more white chocolate chips in the filling.
  • Consider adding some chopped nuts or shredded coconut to the biscotti dough for added texture.
