Matcha and White Chocolate Cheesecake Bars

A Japanese-inspired twist on classic cheesecake bars, featuring matcha green tea and white chocolate.

Matcha and White Chocolate Cheesecake Bars

Ingredients

  • 1 1/2 cups graham cracker crumbs (for crust)
  • 1 cup granulated sugar
  • 1/4 cup matcha powder
  • 1 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • 8 ounces white chocolate chips
  • Fresh matcha leaves for garnish (optional)

Instructions

Prepare the Crust

  1. Preheat oven to 350°F.
  2. In a medium bowl, mix together graham cracker crumbs and sugar.
  3. Add melted butter and stir until well combined.
  4. Press mixture into the bottom of an 8-inch square baking dish.
  5. Bake for 10-12 minutes or until lightly browned.

Make the Cheesecake Filling

  1. In a large mixing bowl, beat cream cheese until smooth.
  2. Add granulated sugar and beat until combined.
  3. Beat in eggs, one at a time, followed by vanilla extract.
  4. Stir in matcha powder.
  5. Melt white chocolate chips and fold into cheesecake mixture.

Assemble the Bars

  1. Pour cheesecake mixture over crust.
  2. Bake for 25-30 minutes or until set.
  3. Allow to cool completely on a wire rack.
  4. Refrigerate for at least 4 hours before cutting into bars.

Serve

  • Cut into squares and garnish with fresh matcha leaves, if desired.
  • Store in an airtight container in the refrigerator for up to 5 days.
