Matcha and Strawberry Tiramisu Cream Puffs

Makes 12-15 cream puffs.
Ingredients:
For the Ladyfingers:
- 1 1/2 cups (190g) all-purpose flour
- 3 large egg whites
- 1/4 cup (60g) granulated sugar
- 1/2 teaspoon matcha powder
For the Filling:
- 8 ounces (225g) mascarpone cheese
- 1/4 cup (60g) confectioners' sugar
- 1 tablespoon matcha powder
- 2 tablespoons strawberry liqueur (such as Grand Marnier)
- 1/2 cup (120g) whipped cream
For the Assembly:
- Confectioners' sugar, for dusting
- Fresh strawberries, sliced, for garnish
Instructions
To Make the Ladyfingers:
- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together the flour and matcha powder.
- In a separate large bowl, using an electric mixer, beat the egg whites until stiff peaks form.
- Gradually add the granulated sugar to the egg mixture and continue beating until combined.
- Sift the flour mixture over the egg mixture and gently fold until just combined.
- Transfer the batter to a piping bag fitted with a large round tip.
- Pipe 1-inch (2.5cm) lengths of batter onto a parchment-lined baking sheet, leaving about 1 inch (2.5 cm) space between each ladyfinger.
- Tap the baking sheet gently on the counter to remove any air bubbles.
- Bake for 12-15 minutes or until firm and dry.
- Allow the ladyfingers to cool completely in the pan.
To Make the Filling:
- In a large bowl, using an electric mixer, beat the mascarpone cheese until creamy.
- Add the confectioners' sugar, matcha powder, and strawberry liqueur, and continue beating until combined.
- Fold in the whipped cream until smooth.
To Assemble the Cream Puffs:
- Split the ladyfingers in half horizontally using a serrated knife.
- Dip each ladyfinger into the filling mixture for about 5 seconds on each side, allowing it to absorb some of the liquid without becoming too soggy.
- Place a split ladyfinger bottom into each cream puff cup or small pastry shell.
- Spoon a dollop of the matcha-whipped mascarpone mixture onto the ladyfinger.
- Repeat this process with a second layer of ladyfingers and filling, ending with a sprinkle of confectioners' sugar on top.
- Dust the tops with additional confectioners' sugar and garnish each cream puff with a sliced strawberry.
Notes:
This recipe is inspired by traditional Italian tiramisu, but features matcha-green tea-infused ladyfingers soaked in strawberry liqueur, adding a unique Japanese twist to this beloved dessert.
