Matcha and Strawberry Swirl Cheesecake Bars

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup confectioners' sugar
  • 1/2 cup unsalted butter, softened
  • 16 ounces cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup matcha powder (Japanese green tea)
  • 1 cup strawberry jam
  • 1 cup fresh strawberries, sliced

Instructions

Preparing the Crust

  1. Preheat your oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, whisk together flour and confectioners' sugar.
  3. Add softened butter and mix until the dough resembles coarse crumbs.
  4. Press the mixture evenly into the prepared baking dish.

Making the Cheesecake Filling

  1. Beat cream cheese in a large mixing bowl until smooth.
  2. Gradually add granulated sugar, beating until combined.
  3. Beat in eggs one at a time.
  4. Add vanilla extract and mix well.
  5. Stir in matcha powder.
  6. Pour cheesecake batter over the crust.

Adding the Strawberry Swirl

  1. Drop spoonfuls of strawberry jam on top of the cheesecake batter, spreading it gently with a knife to create a swirly pattern.
  2. Arrange fresh strawberries on top of the cheesecake and swirl in the strawberry jam.

Baking the Cheesecake Bars

  1. Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
  2. Let cool completely on a wire rack.

Notes

  • For best results, refrigerate the bars overnight to allow the cheesecake filling to firm up.
  • Slice into squares and serve chilled, garnished with additional sliced strawberries if desired.
