Matcha Waffle Cake

A layered dessert featuring matcha-infused waffles, green tea buttercream, and mocha ganache.

Matcha Waffle Cake

Ingredients

For the matcha waffles:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup matcha powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons vegetable oil

For the green tea buttercream:

  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 teaspoons matcha powder
  • 2 teaspoons heavy cream

For the mocha ganache:

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons granulated sugar
  • 1 teaspoon instant coffee powder

Instructions

Make the matcha waffles:

  1. Preheat your waffle iron to medium-high heat.
  2. In a large bowl, whisk together flour, matcha powder, salt, and sugar.
  3. In a separate bowl, whisk together eggs, milk, and vegetable oil.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Cook the waffles in batches until golden brown.

Make the green tea buttercream:

  1. Beat the softened butter with an electric mixer until light and fluffy.
  2. Gradually add powdered sugar, matcha powder, and heavy cream.
  3. Beat until smooth and creamy.

Assemble the cake:

  1. Place a layer of matcha waffles on a serving plate.
  2. Spread a layer of green tea buttercream on top of the waffles.
  3. Repeat the layers two more times, finishing with a layer of mocha ganache.

Notes

  • You can store leftover matcha waffles in an airtight container for up to 24 hours.
  • For a stronger matcha flavor, use 1/2 cup matcha powder instead of 1/4 cup.
  • If you don't have matcha powder, you can omit it or substitute with spinach powder.
