Matcha Waffle Cake
Ingredients
For the matcha waffles:
- 1 1/2 cups all-purpose flour
- 1/4 cup matcha powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup milk
- 2 tablespoons vegetable oil
For the green tea buttercream:
- 1 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 teaspoons matcha powder
- 2 teaspoons heavy cream
For the mocha ganache:
- 1 cup heavy cream
- 1/2 cup whole milk
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons granulated sugar
- 1 teaspoon instant coffee powder
Instructions
Make the matcha waffles:
- Preheat your waffle iron to medium-high heat.
- In a large bowl, whisk together flour, matcha powder, salt, and sugar.
- In a separate bowl, whisk together eggs, milk, and vegetable oil.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Cook the waffles in batches until golden brown.
Make the green tea buttercream:
- Beat the softened butter with an electric mixer until light and fluffy.
- Gradually add powdered sugar, matcha powder, and heavy cream.
- Beat until smooth and creamy.
Assemble the cake:
- Place a layer of matcha waffles on a serving plate.
- Spread a layer of green tea buttercream on top of the waffles.
- Repeat the layers two more times, finishing with a layer of mocha ganache.
Notes
- You can store leftover matcha waffles in an airtight container for up to 24 hours.
- For a stronger matcha flavor, use 1/2 cup matcha powder instead of 1/4 cup.
- If you don't have matcha powder, you can omit it or substitute with spinach powder.
