Matcha Waffle Brownies

Moist brownies infused with matcha green tea, layered with crispy waffles and topped with a rich chocolate ganache.

Matcha Waffle Brownies

Ingredients

For the brownies

  • 1 cup (200g) dark chocolate chips
  • 1/2 cup (100g) unsalted butter, at room temperature
  • 2 large eggs
  • 1 teaspoon matcha powder
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups (160g) all-purpose flour
  • 1 cup (200g) granulated sugar

For the waffles

  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter, melted
  • 1 large egg
  • 1 cup (240ml) milk

For the chocolate ganache

  • 1 cup (200g) dark chocolate chips
  • 1/4 cup (60ml) heavy cream

Instructions

Make the brownies

  1. Preheat your oven to 350°F (180°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, whisk together flour, sugar, and matcha powder.
  3. Melt the butter and dark chocolate in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  4. Whisk in the eggs one at a time, followed by the vanilla extract.
  5. Add the dry ingredients to the chocolate mixture and stir until just combined.
  6. Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
  7. Let cool completely in the pan.

Make the waffles

  1. In a large bowl, whisk together flour, baking powder, and salt.
  2. In a separate bowl, whisk together melted butter, egg, milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Cook in a waffle iron according to manufacturer's instructions.

Assemble the brownies

  1. Cut the cooled brownies into 12-15 squares.
  2. Top each square with a crispy waffle, pressing gently to adhere.
  3. Drizzle with chocolate ganache (see below) and serve immediately.

Make the chocolate ganache

  1. Melt the dark chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  2. Whisk in the heavy cream until fully incorporated.
