Matcha Waffle Brownies

Ingredients
For the brownies
- 1 cup (200g) dark chocolate chips
- 1/2 cup (100g) unsalted butter, at room temperature
- 2 large eggs
- 1 teaspoon matcha powder
- 1 teaspoon vanilla extract
- 1 and 1/4 cups (160g) all-purpose flour
- 1 cup (200g) granulated sugar
For the waffles
- 2 cups (250g) all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon unsalted butter, melted
- 1 large egg
- 1 cup (240ml) milk
For the chocolate ganache
- 1 cup (200g) dark chocolate chips
- 1/4 cup (60ml) heavy cream
Instructions
Make the brownies
- Preheat your oven to 350°F (180°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium bowl, whisk together flour, sugar, and matcha powder.
- Melt the butter and dark chocolate in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
- Whisk in the eggs one at a time, followed by the vanilla extract.
- Add the dry ingredients to the chocolate mixture and stir until just combined.
- Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Let cool completely in the pan.
Make the waffles
- In a large bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, whisk together melted butter, egg, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Cook in a waffle iron according to manufacturer's instructions.
Assemble the brownies
- Cut the cooled brownies into 12-15 squares.
- Top each square with a crispy waffle, pressing gently to adhere.
- Drizzle with chocolate ganache (see below) and serve immediately.
Make the chocolate ganache
- Melt the dark chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
- Whisk in the heavy cream until fully incorporated.
