Matcha Tiramisu Waffles
Ingredients
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 2 tablespoons matcha powder
- 1 cup milk
- 2 tablespoons unsalted butter, melted
- 12-16 ladyfingers (for the tiramisu mixture)
- Whipped mascarpone cheese and matcha powder (for serving)
Instructions
Make the Waffle Batter
- In a medium bowl, whisk together flour, baking powder, salt, and sugar.
- In a large bowl, whisk together eggs, matcha powder, milk, and melted butter.
- Gradually add dry ingredients to wet ingredients and mix until just combined.
- Let batter rest for 10-15 minutes before waffling.
Make the Tiramisu Mixture
- Dip ladyfingers in coffee or espresso for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
- In a large bowl, combine the dipped ladyfingers, mascarpone cheese, matcha powder, and granulated sugar. Mix until well combined.
Assemble and Serve
- Preheat your waffle iron to medium-high heat.
- Using a 1/4 cup measuring cup, scoop the waffle batter onto the center of the waffle iron.
- Cook for 3-5 minutes or until golden brown.
- Repeat with remaining batter, keeping cooked waffles warm in a single layer on a baking sheet.
- To assemble, place a matcha-infused whipped mascarpone cheese dollop on top of each waffle.
- Place a few ladyfingers on top of the whipped mascarpone cheese.
- Garnish with additional matcha powder and serve immediately.
Notes
- Make sure to not overmix the batter or the tiramisu mixture, as this can result in dense, soggy waffles and ladyfingers.
- If you don't have a matcha-infused whipped mascarpone cheese, you can make one by whisking together 1 cup heavy cream, 2 tablespoons granulated sugar, and 1 teaspoon matcha powder until stiff peaks form.
