Ingredients

For the crust:

  • 1 cup (200g) ground almonds
  • 1/2 cup (100g) confectioners' sugar
  • 1/4 teaspoon matcha powder
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened

For the cheesecake layer:

  • 16 ounces (450g) cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup (30g) matcha powder
  • 1 cup (240g) sour cream

For the tiramisu layer:

  • 12-16 ladyfingers
  • 1 cup (240ml) strong brewed coffee
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons confectioners' sugar

Instructions

Prepare the crust

  1. Preheat your oven to 350°F (180°C). Line an 8-inch (20cm) square baking dish with parchment paper.
  2. In a medium bowl, whisk together ground almonds, confectioners' sugar, matcha powder, and salt.
  3. Add the softened butter to the almond mixture and stir until well combined.
  4. Press the crust mixture evenly into the prepared baking dish.

Prepare the cheesecake layer

  1. In a large mixing bowl, beat the cream cheese until smooth.
  2. Gradually add the granulated sugar and continue beating until well combined.
  3. Beat in the eggs one at a time, followed by the vanilla extract and matcha powder.
  4. Stir in the sour cream.

Assemble the dessert

  1. Pour the cheesecake mixture over the prepared crust.
  2. Dip the ladyfingers into the brewed coffee for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
  3. Arrange the ladyfingers on top of the cheesecake layer in a single layer, trimming any excess to fit the dish.

Prepare the tiramisu layer

  1. In a small bowl, whisk together the cocoa powder and confectioners' sugar.
  2. Sprinkle the cocoa mixture evenly over the ladyfingers.

Baking and Cooling

  1. Bake for 35-40 minutes or until the edges are set and the center is slightly jiggly.
  2. Allow the dessert to cool completely in the pan on a wire rack.

Serving

  1. Once cooled, refrigerate the dessert for at least 4 hours or overnight.
  2. Cut into bars and serve chilled.

Enjoy your delightful Matcha Tiramisu Cheesecake Bars!
