Ingredients:

  • 16-20 ladyfingers
  • 2 cups strong brewed coffee
  • 1 cup granulated sugar
  • 1/4 cup matcha powder (preferably ceremonial grade)
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped
  • Matcha leaves for garnish

Instructions:

  1. Make the matcha ladyfingers: In a small bowl, whisk together the coffee and matcha powder until well combined.
  2. Dip each ladyfinger into the coffee mixture for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
  3. Prepare the tiramisu cream: In a separate bowl, whip the heavy cream until it forms stiff peaks. Set aside.
  4. In another bowl, mix together the softened cream cheese, granulated sugar, eggs, and vanilla extract until smooth.
  5. Stir in the whipped heavy cream to create a creamy mixture.
  6. Assemble the cheesecake: In a large mixing bowl, combine the matcha ladyfingers, tiramisu cream, and the prepared coffee mixture (from step 1).
  7. Pour the cheesecake batter into a 9-inch springform pan and smooth the top.
  8. Bake at 325°F for 35-40 minutes or until set.
  9. Chill and serve: Allow the cheesecake to cool completely in the pan, then refrigerate for at least 4 hours before serving.
