Ingredients:
- 1 and 1/2 sticks of unsalted butter (12 tablespoons), plus more for greasing the pan
- 2 cups of sugar
- 4 large eggs
- 1 teaspoon of matcha powder
- 1 teaspoon of vanilla extract
- 1/4 cup of strong brewed coffee
- 1 and 1/4 cups of all-purpose flour
- 1/2 cup of unsweetened cocoa powder
- 1 teaspoon of salt
- 1 cup of mascarpone cheese
- 1 cup of whipped cream
- Matcha powder for dusting
Instructions:
Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a medium bowl, whisk together flour, cocoa powder, and salt. Set aside. Melt the butter and sugar in a large bowl set over a pot of simmering water. Once melted, remove from heat and stir in the matcha powder and vanilla extract. Let it cool slightly, then beat in the eggs one at a time. Stir in the coffee and flour mixture until just combined. Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs attached.
Allow the brownies to cool completely in the pan.
Once cooled, cut into squares. To make the tiramisu layers: Dip each square of brownie into the brewed coffee for about 3 seconds on each side. Place a layer of whipped cream on top of the brownie, then sprinkle with matcha powder. Repeat this process until all the ingredients have been used up.
Dust with additional matcha powder and serve.
Note: This recipe combines elements from #35 (Tiramisu) and #36 (Vanilla cupcakes), but with a unique twist using matcha powder.
