Matcha Pistachio Crème Brûlée Tiramisu

A creative twist on traditional desserts, this Matcha Pistachio Crème Brûlée Tiramisu combines the delicate flavors of Japanese matcha with the richness of Italian tiramisu.

Ingredients

For the ladyfingers:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large egg whites
  • 2 teaspoons matcha powder

For the pistachio cream:

  • 8 ounces mascarpone cheese
  • 1 tablespoon unsalted butter, softened
  • 2 tablespoons confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped fresh pistachios

For the crème brûlée:

  • 1 cup granulated sugar
  • 2 large egg yolks
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon matcha powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make the ladyfingers:
    • In a medium bowl, whisk together flour, granulated sugar, and matcha powder.
    • Create a well in the center and add egg whites; mix until smooth.
    • Transfer mixture to a piping bag fitted with a large round tip.
    • Pipe ladyfinger shapes onto a parchment-lined baking sheet.
    • Bake for 12-15 minutes or until firm. Allow to cool completely.
  3. Prepare the pistachio cream:
    • In a medium bowl, beat mascarpone cheese and butter until smooth.
    • Add confectioners' sugar, vanilla extract, and chopped pistachios; mix well.
  4. Make the crème brûlée:
    • In a small saucepan, combine granulated sugar, egg yolks, heavy cream, and matcha powder. Whisk until sugar is dissolved.
    • Cook over medium heat, stirring constantly, until mixture thickens (about 10-12 minutes).
  5. Assemble the tiramisu:
    • Dip ladyfingers into the crème brûlée mixture for about 3-5 seconds on each side. They should be soft but still hold their shape.
    • In a large serving dish, create a layer of ladyfingers.
    • Spread half of the pistachio cream over the ladyfingers.
    • Repeat the layers: ladyfingers and pistachio cream.
  6. Top with crème brûlée:
    • Pour the remaining crème brûlée mixture over the top layer of ladyfingers.
  7. Caramelize sugar:
    • Sprinkle a thin layer of granulated sugar over the top of the tiramisu.
    • Caramelize the sugar using a kitchen torch or under the broiler until golden brown.

Serve chilled, garnished with matcha powder and chopped pistachios if desired.
