Ingredients
For the Pastry Dough:
- 2 cups (250g) all-purpose flour
- 1 tsp salt
- 1/2 cup (115g) unsalted butter, chilled and cut into small pieces
- 1 egg, beaten
- 1 tbsp water
For the Matcha Mousse Tiramisu Filling:
- 8 oz mascarpone cheese
- 2 tsp matcha powder
- 1 cup granulated sugar
- 4 large egg yolks
- 1/2 cup strong brewed coffee
- 12-16 ladyfingers
For the Whipped Cream Topping:
- 1 cup heavy cream
- 2 tbsp granulated sugar
Instructions
Make the Pastry Dough:
- In a medium bowl, whisk together flour and salt.
- Add the cold butter and use a pastry blender or your fingers to work it into the flour until the mixture resembles coarse crumbs.
- Gradually add the beaten egg and water; stir with a fork until the dough comes together in a ball.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Prepare the Matcha Mousse Tiramisu Filling:
- In a medium bowl, whisk together mascarpone cheese, matcha powder, and granulated sugar until well combined.
- Beat in the egg yolks until smooth.
- Stir in the brewed coffee.
- Dip each ladyfinger into the coffee mixture for about 3-5 seconds on each side.
- In a separate bowl, whip heavy cream until stiff peaks form.
Assemble and Bake the Tart:
- Preheat oven to 375°F (190°C).
- Roll out the chilled pastry dough to a thickness of about 1/8 inch (3mm).
- Transfer the dough to a 9-inch (23cm) tart pan with a removable bottom.
- Arrange the ladyfingers on the bottom of the tart shell, overlapping them slightly.
- Spread the matcha mousse tiramisu filling over the ladyfingers.
- Top with whipped cream and decorate as desired.
Chill and Serve:
- Refrigerate for at least 3 hours or overnight to allow the flavors to meld together.
- Slice into wedges and serve chilled.
