Matcha Mousse Brownies
Servings: 12-15
Ingredients:
- 1 cup (200g) dark chocolate chips (at least 70% cocoa)
- 1/2 cup (100g) unsalted butter
- 1 cup (200g) granulated sugar
- 4 large eggs
- 2 teaspoons matcha powder
- 1 teaspoon vanilla extract
- 1 and 1/4 cups (160g) all-purpose flour
- 1 teaspoon salt
- For the mousse:
- 8 ounces (225g) heavy cream
- 1 cup (200g) granulated sugar
- 2 tablespoons matcha powder
Instructions:
- Preheat and prepare the baking dish: Preheat your oven to 350°F (180°C). Grease an 8-inch square baking pan and line it with parchment paper, leaving some overhang for easy removal.
- Make the brownies: In a medium bowl, whisk together flour, salt, and matcha powder. Set aside.
- Melt the chocolate in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth. Remove from heat.
- In a large bowl, use an electric mixer to beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in eggs one at a time, followed by the melted chocolate and vanilla extract.
- Gradually mix in the flour mixture until just combined, being careful not to overmix.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake the brownies: Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs attached. Remove from the oven and let cool completely in the pan.
For the mousse:
In a separate bowl, whip the heavy cream until soft peaks form.
In another bowl, mix together sugar and matcha powder.
Fold the whipped cream into the sugar mixture until well combined.
Assemble the brownies: Once the brownies are completely cool, cut them into squares or rectangles of your desired size.
Spoon a dollop of matcha mousse on top of each brownie square.
Serve immediately and enjoy!
Tips:
- Make sure to handle the matcha powder carefully, as it can be quite powdery and may cause a mess.
- Don't overmix the batter or the mousse, as this can lead to tough brownies and a dense mousse.
- If you want a stronger matcha flavor, you can increase the amount of matcha powder in both the brownie batter and the mousse.
