Matcha Layer Cake with Black Sesame Crunch

Ingredients:
For the cake:
- 2 1/4 cups (285g) all-purpose flour
- 1 1/2 cups (180g) granulated sugar
- 3 teaspoons matcha powder
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup (235ml) whole milk, at room temperature
- 2 large eggs
- 1 teaspoon pure vanilla extract
For the black sesame crunch:
- 1/4 cup (30g) white sesame seeds
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
For the matcha buttercream:
- 1 1/2 cups (190g) unsalted butter, softened
- 3 cups (600g) confectioners' sugar
- 2 teaspoons matcha powder
- 2 tablespoons whole milk
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
In a medium bowl, whisk together the flour, sugar, matcha powder, baking powder, and salt.
In a large mixing bowl, using an electric mixer, beat the milk and eggs until well combined.
Add the dry ingredients to the wet ingredients and mix until just combined.
Divide the batter evenly among the prepared pans and smooth the tops.
Bake for 25-30 minutes or until a toothpick inserted into the center of each cake comes out clean.
Allow the cakes to cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.
To make the black sesame crunch, combine the sesame seeds, sugar, and salt in a small bowl. Mix well until the seeds are evenly coated with the sugar mixture.
To make the matcha buttercream, beat the butter in a large mixing bowl until creamy.
Gradually add the confectioners' sugar to the butter and mix until smooth and creamy.
Add the matcha powder and mix until well combined.
Add the milk and mix until the desired consistency is reached.
To assemble the cake, place one of the cooled cakes on a serving plate or cake stand.
Spread a layer of matcha buttercream on top of the cake.
Repeat the process with the remaining two cakes, creating a stacked effect.
Sprinkle the black sesame crunch over the top of the cake.
