Matcha Lavender Blondies

Moist and flavorful matcha blondies infused with the sweetness of lavender.

Matcha Lavender Blondies

Servings:

12-15 blondies

Ingredients:

For the Blondie Mix:

  • 2 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon matcha powder (high-quality)
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Lavender Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons lavender syrup (see note)
  • 1 tablespoon milk or heavy cream
  • 1/4 teaspoon salt

Instructions:

To Make the Blondie Mix:

  1. Preheat your oven to 350°F (175°C). Line an 8-inch x 8-inch baking dish with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate large bowl, use an electric mixer to cream the butter until it's light and fluffy. Add matcha powder and mix well.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients mixture to the wet ingredients mixture. Mix until just combined (do not overmix).
  6. Press the blondie dough evenly into the prepared baking dish.

To Bake:

  1. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  2. Let the blondies cool completely on a wire rack.

For the Lavender Glaze:

  1. Whisk together powdered sugar, lavender syrup, milk, and salt in a small bowl until smooth.
  2. Drizzle the glaze over the cooled blondies.

Notes:

  • To make lavender syrup, combine 1 cup granulated sugar and 1 cup water with 10-15 dried lavender buds in a saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes. Let cool and strain before using.
  • High-quality matcha powder will give the best flavor results.

Variations:

  • If you prefer a more pronounced matcha flavor, use 1 1/2 or even 2 teaspoons of matcha powder.
  • For a different flavor combination, try adding chopped nuts or dried cranberries to the blondie dough.
