Matcha Green Tea Tiramisu
Ingredients:
- 12-16 ladyfingers
- 1/2 cup matcha powder
- 8 oz mascarpone cheese
- 1/4 cup granulated sugar
- 2 tablespoons unsweetened almond milk
- 2 teaspoons vanilla extract
- 1 cup strong brewed espresso
- 1/4 cup green tea syrup (see note)
- Whipped cream and matcha powder for garnish
Instructions:
Prepare the Matcha Cream:
- In a medium bowl, whisk together mascarpone cheese, granulated sugar, almond milk, and vanilla extract until smooth.
- Add matcha powder to the bowl and whisk until fully incorporated.
Soak the Ladyfingers:
- Brew a cup of strong espresso and let it cool.
- Dip each ladyfinger into the cooled espresso for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
- Place the soaked ladyfingers in a single layer on a wire rack to dry.
Assemble the Tiramisu:
- In a large serving dish, create a layer of soaked ladyfingers.
- Spread half of the matcha cream over the ladyfingers.
- Repeat the layers, starting with the ladyfingers and then the remaining matcha cream.
- Cover the dish with plastic wrap and refrigerate for at least 3 hours or overnight.
Garnish:
- Just before serving, sprinkle a layer of matcha powder on top of the tiramisu.
- Top with whipped cream and additional matcha powder if desired.
Note: Green Tea Syrup
- Combine 1 cup water and 1 cup granulated sugar in a saucepan.
- Add 1/4 cup matcha powder to the saucepan and whisk until dissolved.
- Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
- Strain the syrup into a clean glass bottle and let it cool.
