Matcha Green Tea Pound Cake with Black Sesame Crunch

Ingredients:
- For the cake:
- 1 cup (200g) unsalted butter, softened
- 2 large eggs
- 2 teaspoons matcha powder
- 1 teaspoon vanilla extract
- 3 cups (360g) all-purpose flour
- 1 cup (200g) granulated sugar
- For the black sesame crunch:
- 1/4 cup (30g) black sesame seeds
- 2 tablespoons granulated sugar
Instructions:
- Preheat your oven to 325°F (165°C). Grease a 9x5-inch loaf pan and set it aside.
- In a medium-sized bowl, whisk together the flour, matcha powder, and salt. Set aside.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
- Gradually mix in the flour mixture until just combined, being careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth out the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
For the black sesame crunch:
- In a small bowl, mix together the black sesame seeds and granulated sugar.
- Sprinkle the mixture evenly over the top of the cooled cake.

- To ensure that your matcha powder is evenly distributed throughout the batter, be sure to sift it into the flour mixture.
- If you're not a fan of strong green tea flavor, start with 1 teaspoon of matcha powder and adjust to taste.
