Matcha Green Tea Pound Cake

Ingredients
For the cake:
- 1 1/2 cups (190g) unsalted butter, softened
- 1 3/4 cups (210g) granulated sugar
- 4 large eggs, at room temperature
- 2 teaspoons matcha powder
- 2 3/4 cups (315g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
For the glaze:
- 1 cup (200g) powdered sugar
- 2 tablespoons matcha powder
- 2 tablespoons milk or heavy cream
- 1 tablespoon unsalted butter, softened
Instructions
- Preheat your oven to 325°F (165°C). Grease and flour a 9x5-inch loaf pan.
- In a large mixing bowl, beat the butter until creamy. Gradually add the sugar and continue beating until light and fluffy.
- Beat in the eggs one at a time, followed by the matcha powder.
- In a separate bowl, whisk together the flour, baking powder, and salt. Add this mixture to the wet ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Glaze
- In a small bowl, whisk together the powdered sugar, matcha powder, milk, and softened butter until smooth.
- Drizzle the glaze over the cooled pound cake.

- If you prefer a stronger matcha taste, you can increase the amount of matcha powder used in the recipe.
