Ingredients
For the Brownies:
- 1 cup (200g) dark chocolate chips
- 1/2 cup (100g) unsalted butter, at room temperature
- 1 cup (120g) sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 and 3/4 cups (210g) all-purpose flour
- 1 teaspoon salt
For the Matcha Mousse:
- 1 cup (240ml) heavy cream
- 2 tablespoons matcha powder
- 2 tablespoons granulated sugar
- 1 tablespoon unsalted butter, softened
Instructions
- Preheat: Preheat your oven to 350°F (180°C). Line an 8x8-inch baking dish with parchment paper.
- Make the Brownies:
- In a medium bowl, whisk together flour and salt; set aside.
- Melt chocolate in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
- Whisk together sugar, eggs, and vanilla extract.
- Stir in the melted chocolate until well combined.
- Add the flour mixture to the wet ingredients and stir until just combined.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake the Brownies:
- Bake for 25-30 minutes or until a toothpick inserted 2 inches from the pan's edge comes out with a few moist crumbs attached.
- Let cool completely in the pan.
- Make the Matcha Mousse:
- In a separate medium bowl, whip the heavy cream until soft peaks form.
- Add matcha powder and granulated sugar; continue whipping until stiff peaks form.
- Stir in softened butter until well combined.
- Assemble:
- Once the brownies are completely cool, spread the matcha mousse on top of the cooled brownies.
Tips
- For a more intense green tea flavor, use 3 tablespoons of matcha powder.
- To ensure the mousse doesn't melt, refrigerate it until ready to assemble with the brownies.
