Ingredients

For the Brownies:

  • 1 cup (200g) dark chocolate chips
  • 1/2 cup (100g) unsalted butter, at room temperature
  • 1 cup (120g) sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 3/4 cups (210g) all-purpose flour
  • 1 teaspoon salt

For the Matcha Mousse:

  • 1 cup (240ml) heavy cream
  • 2 tablespoons matcha powder
  • 2 tablespoons granulated sugar
  • 1 tablespoon unsalted butter, softened

Instructions

  1. Preheat: Preheat your oven to 350°F (180°C). Line an 8x8-inch baking dish with parchment paper.
  2. Make the Brownies:
    • In a medium bowl, whisk together flour and salt; set aside.
    • Melt chocolate in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
    • Whisk together sugar, eggs, and vanilla extract.
    • Stir in the melted chocolate until well combined.
    • Add the flour mixture to the wet ingredients and stir until just combined.
    • Pour the batter into the prepared baking dish and smooth the top.
  3. Bake the Brownies:
    • Bake for 25-30 minutes or until a toothpick inserted 2 inches from the pan's edge comes out with a few moist crumbs attached.
    • Let cool completely in the pan.
  4. Make the Matcha Mousse:
    • In a separate medium bowl, whip the heavy cream until soft peaks form.
    • Add matcha powder and granulated sugar; continue whipping until stiff peaks form.
    • Stir in softened butter until well combined.
  5. Assemble:
    • Once the brownies are completely cool, spread the matcha mousse on top of the cooled brownies.

Tips

  • For a more intense green tea flavor, use 3 tablespoons of matcha powder.
  • To ensure the mousse doesn't melt, refrigerate it until ready to assemble with the brownies.
