Matcha Green Tea Creme Brulee with Sesame Brittle Crust

A unique Japanese-inspired dessert that combines the brightness of matcha green tea with the crunch of sesame brittle.

Matcha Green Tea Creme Brulee with Sesame Brittle Crust

Servings: 6-8

Ingredients:

  • 3 large egg yolks
  • 1/2 cup (110g) granulated sugar
  • 1/4 cup (15g) matcha powder
  • 1 cup (240ml) heavy cream
  • 1 tsp vanilla extract
  • Sesame Brittle Crust (see below)

Instructions:

Make the Matcha Creme Brulee

  1. Preheat oven to 300°F (150°C).
  2. In a medium bowl, whisk together egg yolks and sugar until pale yellow.
  3. Add matcha powder and whisk until well combined.
  4. Stir in heavy cream and vanilla extract.
  5. Pour mixture into 6-8 ramekins or small baking dishes.
  6. Place the ramekins in a large baking dish and add hot water to come halfway up the sides of the ramekins.
  7. Bake for 25-30 minutes, or until set.
  8. Remove from oven and let cool to room temperature.

Make the Sesame Brittle Crust

  1. In a small saucepan, combine 1/4 cup (60g) sugar and 1 tbsp water over medium heat.
  2. Cook, stirring occasionally, until caramelized and golden brown (about 5-7 minutes).
  3. Remove from heat and stir in 1 tsp sesame oil and 1 tsp sesame seeds.
  4. Pour mixture onto a parchment-lined baking sheet and spread to form a thin layer.
  5. Allow to cool and harden completely.

Assemble the Dessert

  1. Top each chilled creme brulee with a piece of sesame brittle crust.
  2. Sprinkle with matcha powder, if desired.
  3. Caramelize the sugar on top of each ramekin using a kitchen torch or under the broiler (watch closely!).

Notes

  • For an extra crunchy sesame brittle, try baking it in a 350°F oven for an additional 5-7 minutes after spreading.
  • Use high-quality matcha powder for the best flavor.
  • Store any leftover creme brulee in the refrigerator and top with caramelized sugar just before serving.
