  • 1/4 cup matcha powder
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Matcha Green Tea Cheesecake Filling:

  • 12 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon matcha powder
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the Oat Crumble Topping:

  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

Step 1: Prepare the Matcha Cheesecake Crust

Preheat your oven to 350°F (180°C). In a medium bowl, mix together the graham cracker crumbs, matcha powder, and granulated sugar. Pour in the melted butter and stir until well combined. Press the mixture into the bottom of a 9x9-inch baking dish.

Step 2: Bake the Matcha Cheesecake Crust

Bake the crust for 10-12 minutes, or until it's lightly browned. Let it cool completely.

Step 3: Prepare the Matcha Green Tea Cheesecake Filling

In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar and mix until combined. Beat in the eggs one at a time, followed by the matcha powder and vanilla extract. Stir in the sour cream.

Step 4: Pour the Cheesecake Mixture Over the Crust

Pour the cheesecake mixture over the cooled crust and bake for 25-30 minutes, or until the edges are set and the center is just slightly jiggly.

Step 5: Prepare the Oat Crumble Topping

In a small bowl, mix together the rolled oats, brown sugar, flour, and cinnamon. Add the cold butter and use your fingers or a pastry blender to work it into the dry ingredients until the mixture resembles coarse crumbs. Stir in the nutmeg.

Step 6: Top with Oat Crumble and Bake

Spread the oat crumble topping evenly over the cheesecake filling and bake for an additional 10-12 minutes, or until the top is golden brown.

Serving Suggestions

Let the bars cool completely in the pan before slicing and serving. You can dust them with powdered sugar or serve with a side of matcha whipped cream if desired. Enjoy!
