Matcha Green Tea Cheesecake Bars
A matcha-infused twist on traditional cheesecake bars, these bite-sized treats combine the creaminess of a classic cheesecake with the subtle bitterness and grassy notes of high-quality matcha green tea.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup confectioners' sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon matcha powder (high-quality)
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup sour cream
- Fresh matcha powder for dusting
Instructions
Step 1: Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, granulated sugar, confectioners' sugar, and salt. Add in the softened butter, mixing until the mixture resembles coarse crumbs. Press this mixture into the bottom of an 8-inch square baking dish.
Step 2: Bake the Crust
Bake the crust for 20-25 minutes, or until it is lightly golden brown. Allow it to cool completely before moving on to the next step.
Step 3: Prepare the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the granulated sugar and matcha powder, mixing until well combined. Beat in the eggs one at a time, followed by the sour cream. Pour this filling over the cooled crust.
Step 4: Bake the Cheesecake Filling
Bake the cheesecake for 25-30 minutes, or until it is set and the edges are lightly golden brown. Allow it to cool completely in the baking dish before refrigerating for at least 4 hours.
Step 5: Cut into Bars
Once chilled, remove the cheesecake from the refrigerator and cut it into bars using a sharp knife. Dust with matcha powder for an extra touch of Japanese flair.
