Matcha Green Tea Blondies

- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 teaspoons matcha powder (high-quality, bright green tea powder)
Wet Ingredients:
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (180°C). Grease an 8-inch square baking pan and set it aside.
- Prepare the matcha mixture: In a small bowl, whisk together the flour, baking powder, salt, granulated sugar, brown sugar, and matcha powder until well combined.
- Cream the butter and sugars: Using an electric mixer, beat the softened butter and both sugars until light and fluffy (about 2-3 minutes).
- Add the eggs and vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
- Combine the mixtures: Gradually add the matcha mixture to the wet ingredients and mix until just combined.
- Pour into the prepared pan: Pour the batter into the greased baking pan and smooth out the top with a spatula.
- Bake: Bake for 25-30 minutes or until the edges are golden brown, and the center is set.
- Let it cool: Allow the blondies to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
Notes:
- For an intense matcha flavor, use high-quality matcha powder and adjust the amount according to your taste preferences.
- If you prefer a lighter green tea flavor, reduce the matcha powder to 1 teaspoon or even less.
