Introduction

These matcha green tea almond biscotti are perfect for dunking in your favorite coffee or tea. The addition of a crunchy black sesame crumble adds an extra layer of texture and flavor to these Japanese-inspired biscuits.

Ingredients

For the biscotti:

  • 2 1/4 cups (285g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons matcha green tea powder
  • 1 teaspoon almond extract
  • 1 cup (120g) sliced almonds

For the black sesame crumble:

  • 1/4 cup (30g) white granulated sugar
  • 2 tablespoons black sesame seeds
  • 1 tablespoon unsalted butter, melted

Instructions

  1. Preheat your oven: Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Prepare the biscotti dough: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream the butter and sugar: In a large bowl, use an electric mixer to cream together the butter and granulated sugar until light and fluffy.
  4. Add eggs and matcha green tea powder: Beat in the eggs one at a time, followed by the matcha green tea powder and almond extract.
  5. Mix in the dry ingredients: Gradually mix in the flour mixture until just combined.
  6. Fold in sliced almonds: Fold in the sliced almonds.

Biscotti Assembly

  1. Divide the dough: Divide the dough into 2 equal pieces.
  2. Shape the biscotti: On a lightly floured surface, shape each piece of dough into a log about 12 inches (30cm) long.
  3. Bake the biscotti: Place the logs on the prepared baking sheet, leaving about 1 inch (2.5 cm) between them. Bake for 25-30 minutes or until firm to the touch.
  4. Cool and cut: Allow the biscotti to cool on a wire rack for 10 minutes before cutting into slices.

Black Sesame Crumble Assembly

  1. Mix the sugar and sesame seeds: In a small bowl, mix together the granulated sugar and black sesame seeds.
  2. Add melted butter: Add the melted butter to the sugar and sesame seed mixture. Mix until well combined.

Final Assembly and Serving

  1. Crumble the biscotti: Place a few slices of biscotti on a serving plate or in a glass jar. Top with a sprinkle of black sesame crumble.
  2. Serve: Serve immediately, or store the biscotti in an airtight container for up to 5 days and refresh the black sesame crumble as needed.
