Maple Walnut Tres Leches Cake
Ingredients:
For the cake:
- 2 1/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup whole milk
- 2 large eggs
- 2 tablespoons pure maple syrup
For the streusel:
- 1/2 cup chopped walnuts
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
For the tres leches mixture:
- 1 cup evaporated milk
- 1 cup heavy cream
- 1 cup condensed milk
Instructions:
Preheat and prepare the pan:
Preheat your oven to 350°F (180°C). Grease a 9x13-inch baking dish and set it aside.
Mix the cake ingredients:
In a medium bowl, whisk together flour, sugar, baking powder, and salt. In a large mixing bowl, whisk together milk, eggs, and maple syrup. Add the dry ingredients to the wet ingredients and mix until just combined.
Prepare the streusel:
In a small bowl, combine walnuts, flour, sugar, and salt. Add softened butter and mix until the mixture resembles coarse crumbs.
Assemble the cake:
Pour the cake batter into the prepared baking dish. Top with the walnut streusel, making sure to cover the entire surface.
Bake the cake:
Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let it cool completely in the pan.
Make the tres leches mixture:
Whisk together evaporated milk, heavy cream, and condensed milk.
Assemble the tres leches cake:
Poke holes all over the cooled cake using a skewer or fork. Pour the tres leches mixture evenly over the top of the cake. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
Serve:
Cut into squares and serve chilled, with additional maple syrup on the side if desired.
