Maple Walnut Crepes Suzette

Delicate crepes filled with a sweet maple syrup and crunchy walnut filling, served with a caramelized sugar crust.

Maple Walnut Crepes Suzette

Ingredients:

For the crepe batter:

  • 1 1/2 cups all-purpose flour
  • 2 1/2 teaspoons salt
  • 4 large eggs
  • 1 cup milk
  • 2 tablespoons butter, melted

For the maple walnut filling:

  • 1/2 cup pure maple syrup
  • 1/4 cup chopped walnuts
  • 2 tablespoons unsalted butter
  • 2 tablespoons confectioners' sugar
  • 1 teaspoon vanilla extract

Instructions:

Make the crepe batter:

  • In a medium bowl, whisk together flour and salt.
  • In a separate bowl, whisk together eggs, milk, and melted butter.
  • Gradually add the dry ingredients to the wet ingredients and whisk until smooth.
  • Let the batter rest for at least 30 minutes in the refrigerator.

Make the maple walnut filling:

  • In a small saucepan, combine maple syrup, chopped walnuts, unsalted butter, confectioners' sugar, and vanilla extract.
  • Cook over medium heat, stirring constantly, until the mixture is smooth and caramelized.
  • Remove from heat and let cool slightly.

Assemble the crepes:

  • Heat a non-stick pan or crepe pan over medium heat.
  • Pour 2-3 tablespoons of the crepe batter into the pan and tilt to evenly coat the bottom.
  • Cook for 1-2 minutes, until the edges start to curl.
  • Flip the crepe and cook for an additional 30 seconds to 1 minute.
  • Repeat with remaining batter.

Fill the crepes:

  • Spread a small amount of the maple walnut filling onto each cooled crepe.
  • Roll up the crepes tightly and place them on a serving plate or individual plates.

Serving suggestions:

  • Serve warm, dust with confectioners' sugar and garnish with fresh mint leaves if desired.
