Maple Pecan Tres Leches Cake

A moist and creamy tres leches cake infused with the warmth of maple syrup and the crunch of pecans.

Maple Pecan Tres Leches Cake

Ingredients:

  • 2 1/4 cups (285g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) packed light brown sugar
  • 1/2 cup (115ml) whole milk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup (30g) chopped pecans

Instructions:

Cake Layer:

  1. Preheat the oven to 350°F (180°C). Grease a 9x13-inch baking dish and set it aside.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set it aside.
  3. In a large mixing bowl, use an electric mixer to cream together the granulated sugar and brown sugar until light and fluffy.
  4. Add the milk and mix until well combined.
  5. Beat in the eggs one at a time, followed by the maple syrup and vanilla extract.
  6. Gradually add the flour mixture and mix until just combined.
  7. Fold in the chopped pecans.

Tres Leches:

  1. In a separate bowl, whisk together 1 cup of evaporated milk, 1 cup of heavy cream, and 1 cup of whole milk.
  2. Pour the tres leches mixture over the cooled cake layer.

Whipped Cream:

  1. Beat the heavy cream until stiff peaks form.
  2. Add 2 tablespoons of granulated sugar and mix until combined.
  3. Use to top the cake.

Notes:

  • You can adjust the amount of maple syrup to your taste.
  • If you prefer a stronger pecan flavor, you can increase the amount used in the batter.
  • The tres leches mixture will seep into the cake layer as it cools, making the cake moist and creamy.
