Maple Pecan Tres Leches Cake

Ingredients:
- 2 1/4 cups (285g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup (200g) granulated sugar
- 1/2 cup (115g) packed light brown sugar
- 1/2 cup (115ml) whole milk, at room temperature
- 2 large eggs, at room temperature
- 2 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup (30g) chopped pecans
Instructions:
Cake Layer:
- Preheat the oven to 350°F (180°C). Grease a 9x13-inch baking dish and set it aside.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set it aside.
- In a large mixing bowl, use an electric mixer to cream together the granulated sugar and brown sugar until light and fluffy.
- Add the milk and mix until well combined.
- Beat in the eggs one at a time, followed by the maple syrup and vanilla extract.
- Gradually add the flour mixture and mix until just combined.
- Fold in the chopped pecans.
Tres Leches:
- In a separate bowl, whisk together 1 cup of evaporated milk, 1 cup of heavy cream, and 1 cup of whole milk.
- Pour the tres leches mixture over the cooled cake layer.
Whipped Cream:
- Beat the heavy cream until stiff peaks form.
- Add 2 tablespoons of granulated sugar and mix until combined.
- Use to top the cake.
Notes:
- You can adjust the amount of maple syrup to your taste.
- If you prefer a stronger pecan flavor, you can increase the amount used in the batter.
- The tres leches mixture will seep into the cake layer as it cools, making the cake moist and creamy.
