Mango and Coconut Cream Pie Bars

A creamy and tropical twist on traditional apple crumble, these mango and coconut cream pie bars are perfect for a warm weather dessert.

Mango and Coconut Cream Pie Bars

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh mango, diced
  • 1 cup shredded coconut
  • 1 cup heavy cream
  • 1 cup sweetened condensed milk

Instructions

Preheat and Prep

Preheat the oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.

Make the Crust

In a medium bowl, whisk together the flour, butter, granulated sugar, and brown sugar until a dough forms. Press the dough into the prepared baking dish.

Bake the Crust

Bake the crust for 20-25 minutes or until lightly golden brown.

Prepare the Filling

In a separate bowl, whisk together the eggs, vanilla extract, mango, shredded coconut, heavy cream, and sweetened condensed milk until well combined.

Assemble and Bake

Pour the filling mixture over the baked crust. Return to the oven for an additional 25-30 minutes or until the filling is set.

Cool and Chill

Let the bars cool completely in the baking dish. Once cooled, refrigerate for at least 2 hours before cutting into bars.
