Mango Upside-Down Cake

Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup mango puree
For the Caramelized Mango:
- 4 ripe mangos, sliced into 1-inch rings
- 1/4 cup brown sugar
- 2 tablespoons unsalted butter
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat your oven to 350°F (180°C). Grease a 9x13-inch baking dish and set it aside.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a large bowl, use an electric mixer to beat the butter until creamy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the mango puree, beginning and ending with the dry ingredients. Beat just until combined.
- Arrange the caramelized mango rings in the prepared baking dish. Pour the batter over the mango and smooth the top.
- Bake for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes. Run a knife around the edges to release the cake, then invert onto a serving plate.
For the Caramelized Mango:
- In a large skillet, combine the butter, brown sugar, cinnamon, and nutmeg. Cook over medium heat, stirring occasionally, until the mixture is bubbly and slightly thickened.
- Add the mango slices to the skillet and cook for 5-7 minutes on each side or until caramelized.
Notes
- This recipe makes one 9x13-inch cake that serves 8-10 people.
- You can adjust the amount of spices in the caramelized mango mixture to your liking.
