Description

A twist on the classic pineapple upside-down cake, this recipe features sweet and tangy mango rings, caramelized in a mixture of butter, brown sugar, and spices. The result is a moist and flavorful cake that's perfect for warm weather or any occasion when you want to impress.

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup mango puree

For the Caramelized Mango:

  • 4 ripe mangos, sliced into 1-inch rings
  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9x13-inch baking dish and set it aside.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a large bowl, use an electric mixer to beat the butter until creamy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the mango puree, beginning and ending with the dry ingredients. Beat just until combined.
  5. Arrange the caramelized mango rings in the prepared baking dish. Pour the batter over the mango and smooth the top.
  6. Bake for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  7. Remove from the oven and let cool in the pan for 10 minutes. Run a knife around the edges to release the cake, then invert onto a serving plate.

For the Caramelized Mango:

  1. In a large skillet, combine the butter, brown sugar, cinnamon, and nutmeg. Cook over medium heat, stirring occasionally, until the mixture is bubbly and slightly thickened.
  2. Add the mango slices to the skillet and cook for 5-7 minutes on each side or until caramelized.

Notes

  • This recipe makes one 9x13-inch cake that serves 8-10 people.
  • You can adjust the amount of spices in the caramelized mango mixture to your liking.
  • For an extra-decadent treat, serve with a scoop of vanilla ice cream.
