Lemon Ricotta Waffles with Strawberry Compote

Ingredients:
For the Waffles:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons unsalted butter, melted
- 1 cup ricotta cheese
- Zest of 1 lemon
For the Strawberry Compote:
- 1 pint fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
- 2 tablespoons honey
Instructions:
Make the Waffles:
- In a large mixing bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together eggs, milk, lemon juice, and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the ricotta cheese and lemon zest.
- Cook the waffles according to your waffle iron's instructions.
Make the Strawberry Compote:
- In a small saucepan, combine sliced strawberries, granulated sugar, and honey.
- Cook over medium heat, stirring occasionally, until the strawberries release their juice and the mixture thickens slightly.
- Remove from heat and let cool to room temperature.
Serve:
Top the waffles with the strawberry compote, whipped cream, or fresh berries if desired. Enjoy!
