Lemon Ricotta Waffles with Strawberry Compote

Light and airy waffles infused with lemon zest, topped with a sweet strawberry compote.

Lemon Ricotta Waffles with Strawberry Compote

Servings:

4-6 people

Ingredients:

For the Waffles:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1 cup ricotta cheese
  • Zest of 1 lemon

For the Strawberry Compote:

  • 1 pint fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 2 tablespoons honey

Instructions:

Make the Waffles:

  1. In a large mixing bowl, whisk together flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together eggs, milk, lemon juice, and melted butter.
  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Fold in the ricotta cheese and lemon zest.
  5. Cook the waffles according to your waffle iron's instructions.

Make the Strawberry Compote:

  1. In a small saucepan, combine sliced strawberries, granulated sugar, and honey.
  2. Cook over medium heat, stirring occasionally, until the strawberries release their juice and the mixture thickens slightly.
  3. Remove from heat and let cool to room temperature.

Serve:

Top the waffles with the strawberry compote, whipped cream, or fresh berries if desired. Enjoy!
