Lemon Ricotta Waffles with Honey and Pistachio Crumble

A delicious breakfast or brunch recipe that combines crispy waffles, creamy ricotta cheese, and a crunchy honey and pistachio crumble.

Lemon Ricotta Waffles with Honey and Pistachio Crumble

Ingredients

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 2 tablespoons freshly squeezed lemon juice
  • 1 cup ricotta cheese
  • 2 tablespoons unsalted butter, melted
  • 1 cup honey and pistachio crumble (see below)

Honey and Pistachio Crumble

  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup chopped fresh pistachios
  • 1 tablespoon unsalted butter, melted

Instructions

Make the Waffles

  1. Preheat your waffle iron to medium-high heat.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together eggs, milk, lemon juice, and melted butter.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the ricotta cheese.
  6. Cook the waffles according to your iron's instructions.

Make the Honey and Pistachio Crumble

  1. In a small bowl, mix together sugar, flour, and chopped pistachios.
  2. Add the melted butter and stir until crumbly.

Serve

  • Split the waffles in half and top with a spoonful of honey and pistachio crumble.
  • Serve immediately and enjoy!
