Lemon Ricotta Waffles with Honey and Pistachio Crumble
Ingredients
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- 2 tablespoons freshly squeezed lemon juice
- 1 cup ricotta cheese
- 2 tablespoons unsalted butter, melted
- 1 cup honey and pistachio crumble (see below)
Honey and Pistachio Crumble
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 cup chopped fresh pistachios
- 1 tablespoon unsalted butter, melted
Instructions
Make the Waffles
- Preheat your waffle iron to medium-high heat.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together eggs, milk, lemon juice, and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Fold in the ricotta cheese.
- Cook the waffles according to your iron's instructions.
Make the Honey and Pistachio Crumble
- In a small bowl, mix together sugar, flour, and chopped pistachios.
- Add the melted butter and stir until crumbly.
Serve
- Split the waffles in half and top with a spoonful of honey and pistachio crumble.
- Serve immediately and enjoy!
