Lemon Ricotta Waffles with Fresh Berries and Whipped Cream

Ingredients:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 2 tablespoons freshly squeezed lemon juice
- 1 cup ricotta cheese
- 1/2 cup heavy cream
- Fresh berries (strawberries, blueberries, raspberries)
- Whipped cream
Instructions:
Make the Waffles:
- Preheat your waffle iron according to the manufacturer's instructions.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In another bowl, whisk together the eggs, lemon juice, and ricotta cheese.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the heavy cream until the batter is smooth.
Cook the Waffles:
- Pour about 1/4 cup of batter onto the center of the waffle iron.
- Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
- Repeat with the remaining batter.
Assemble the Dish:
- Top each waffle with fresh berries, whipped cream, and a sprinkle of powdered sugar.
- Serve immediately and enjoy!
Notes:
- You can make these waffles ahead of time and store them in an airtight container for up to 24 hours.
- If you don't have a waffle iron, you can cook the batter on a griddle or skillet instead.
