Lemon Ricotta Waffles with Fresh Berries and Whipped Cream

A twist on the classic breakfast waffle, these lemon ricotta waffles are topped with fresh berries and whipped cream for a sweet and satisfying treat.

Lemon Ricotta Waffles with Fresh Berries and Whipped Cream

Servings: 4-6 people

Ingredients:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons freshly squeezed lemon juice
  • 1 cup ricotta cheese
  • 1/2 cup heavy cream
  • Fresh berries (strawberries, blueberries, raspberries)
  • Whipped cream

Instructions:

Make the Waffles:

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the eggs, lemon juice, and ricotta cheese.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the heavy cream until the batter is smooth.

Cook the Waffles:

  1. Pour about 1/4 cup of batter onto the center of the waffle iron.
  2. Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
  3. Repeat with the remaining batter.

Assemble the Dish:

  1. Top each waffle with fresh berries, whipped cream, and a sprinkle of powdered sugar.
  2. Serve immediately and enjoy!

Notes:

  • You can make these waffles ahead of time and store them in an airtight container for up to 24 hours.
  • If you don't have a waffle iron, you can cook the batter on a griddle or skillet instead.
  • Feel free to get creative with your toppings – try adding different types of fruit, nuts, or even candy pieces!
