Lemon Ricotta Waffles with Fresh Berries and Honey

A refreshing twist on classic waffles, infused with lemon zest and topped with a dollop of whipped cream, fresh berries, and a drizzle of honey.

Ingredients

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon grated lemon zest
  • 1 cup ricotta cheese
  • Whipped cream and fresh berries for serving
  • Honey for drizzling

Instructions

Make the Waffle Batter

  1. In a medium bowl, whisk together flour, baking powder, salt, and sugar.
  2. In a large bowl, whisk together eggs, melted butter, milk, lemon juice, and lemon zest.
  3. Add the dry ingredients to the wet ingredients and stir until just combined.
  4. Stir in ricotta cheese.

Cook the Waffles

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. Pour about 1/4 cup of batter onto the center of the waffle iron.
  3. Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
  4. Repeat with the remaining batter.

Serve the Waffles

  1. Top each waffle with a dollop of whipped cream, a handful of fresh berries, and a drizzle of honey.
  2. Serve immediately and enjoy!
