A twist on traditional waffles, these lemon ricotta waffles are infused with the brightness of fresh berries and a drizzle of caramel sauce.

Lemon Ricotta Waffles with Fresh Berries and Caramel Drizzle

Servings: 4-6 people

Ingredients:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2 cups milk
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 cup unsalted butter, melted
  • 8 ounces ricotta cheese
  • Fresh berries (strawberries, blueberries, raspberries) for serving
  • Caramel sauce for drizzling

Instructions:

  1. In a medium bowl, whisk together flour, baking powder, and salt.
  2. In a large bowl, whisk together eggs, sugar, milk, lemon juice, and melted butter until well combined.
  3. Add the dry ingredients to the wet ingredients and stir until just combined.
  4. Fold in the ricotta cheese until well incorporated.
