Lemon Ricotta Waffles with Caramelized Pineapple and Coconut Flakes

A unique twist on traditional waffles, these lemon ricotta waffles are topped with caramelized pineapple and toasted coconut flakes.

Lemon Ricotta Waffles with Caramelized Pineapple and Coconut Flakes

Servings: 4-6

Ingredients:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup ricotta cheese
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1 cup pineapple chunks (caramelized)
  • 1/4 cup shredded coconut

Instructions:

  1. Preheat the waffle iron to medium-high heat.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together eggs, ricotta cheese, lemon juice, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Cook the waffles according to the manufacturer's instructions.
  6. Meanwhile, caramelize the pineapple chunks by heating them in a skillet with 1 tablespoon of unsalted butter over medium heat for about 10 minutes or until golden brown.
  7. Top each waffle with caramelized pineapple and toasted coconut flakes.

Notes:

  • For an extra crispy top, cook the waffles for an additional minute after they are done cooking.
  • You can also toast the coconut flakes in a dry skillet for a few seconds to enhance their flavor and aroma.
