Lemon Ricotta Waffles with Caramelized Pineapple and Coconut Flakes

Ingredients:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup ricotta cheese
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons unsalted butter, melted
- 1 cup pineapple chunks (caramelized)
- 1/4 cup shredded coconut
Instructions:
- Preheat the waffle iron to medium-high heat.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, whisk together eggs, ricotta cheese, lemon juice, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Cook the waffles according to the manufacturer's instructions.
- Meanwhile, caramelize the pineapple chunks by heating them in a skillet with 1 tablespoon of unsalted butter over medium heat for about 10 minutes or until golden brown.
- Top each waffle with caramelized pineapple and toasted coconut flakes.
Notes:
- For an extra crispy top, cook the waffles for an additional minute after they are done cooking.
- You can also toast the coconut flakes in a dry skillet for a few seconds to enhance their flavor and aroma.
