Lemon Ricotta Waffles with Caramelized Bananas

Ingredients:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon grated lemon zest
- 8 ounces ricotta cheese, drained and crumbled
- 2 ripe bananas, sliced
Instructions:
- Preheat the waffle iron according to the manufacturer's instructions.
- In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
- In a large bowl, whisk together the eggs, milk, lemon juice, and lemon zest.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Stir in the crumbled ricotta cheese.
- Pour 1/4 cup of the batter onto the center of the waffle iron and spread it out to the edges.
- Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
- Meanwhile, caramelize the bananas by cooking them in a skillet over medium heat with 2 tablespoons of butter until they're tender and golden brown.
- Serve the waffles hot with caramelized bananas on top.
Notes:
- You can make the batter ahead of time and store it in the refrigerator for up to 2 hours.
- If you don't have lemon ricotta, you can use regular ricotta cheese instead.
- This recipe is perfect for a special breakfast or brunch occasion.
