Lemon Ricotta Waffles with Caramelized Bananas

A unique breakfast or brunch recipe that combines the flavors of lemon and ricotta with crispy waffles and caramelized bananas.

Lemon Ricotta Waffles with Caramelized Bananas

Servings: 4-6

Ingredients:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon grated lemon zest
  • 8 ounces ricotta cheese, drained and crumbled
  • 2 ripe bananas, sliced

Instructions:

  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In a large bowl, whisk together the eggs, milk, lemon juice, and lemon zest.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  5. Stir in the crumbled ricotta cheese.
  6. Pour 1/4 cup of the batter onto the center of the waffle iron and spread it out to the edges.
  7. Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
  8. Meanwhile, caramelize the bananas by cooking them in a skillet over medium heat with 2 tablespoons of butter until they're tender and golden brown.
  9. Serve the waffles hot with caramelized bananas on top.

Notes:

  • You can make the batter ahead of time and store it in the refrigerator for up to 2 hours.
  • If you don't have lemon ricotta, you can use regular ricotta cheese instead.
  • This recipe is perfect for a special breakfast or brunch occasion.
