Lemon Ricotta Waffles With Caramelized Pineapple and Pistachio Crunch

A unique breakfast or brunch recipe that combines the flavors of lemon, ricotta, caramelized pineapple, and pistachios in a crispy waffle.

Lemon Ricotta Waffles With Caramelized Pineapple and Pistachio Crunch

Ingredients:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup ricotta cheese
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons unsalted butter, melted
  • Caramelized pineapple (see below for recipe)
  • Chopped pistachios for garnish

Instructions:

To make the waffles:

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together eggs, milk, ricotta cheese, lemon juice, and melted butter.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. The batter should still be slightly lumpy.
  4. Preheat your waffle iron according to the manufacturer's instructions.
  5. Pour about 1/4 cup of the batter onto the center of the waffle iron and spread it out to the edges.
  6. Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
  7. Repeat with the remaining batter.

To make caramelized pineapple:

  • 1 ripe pineapple, sliced into 1-inch pieces
  • 2 tablespoons unsalted butter
  • 1 tablespoon granulated sugar
  1. In a small skillet, melt the butter over medium heat.
  2. Add the pineapple slices and cook for about 5 minutes on each side, or until caramelized.
  3. Stir in the granulated sugar to coat the pineapple.

To assemble:

  1. Place a cooked waffle on a plate.
  2. Top with a slice of caramelized pineapple.
  3. Sprinkle chopped pistachios over the top.

Notes:

  • For an extra crunchy topping, sprinkle some chopped pistachios onto the waffles before baking them in the oven (350°F for 5-7 minutes).
  • If you want to make this recipe more decadent, drizzle with a caramel sauce or whipped cream on top.
