Lemon Ricotta Waffles With Caramelized Pineapple and Pistachio Crunch

Ingredients:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- 1/2 cup ricotta cheese
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons unsalted butter, melted
- Caramelized pineapple (see below for recipe)
- Chopped pistachios for garnish
Instructions:
To make the waffles:
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together eggs, milk, ricotta cheese, lemon juice, and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined. The batter should still be slightly lumpy.
- Preheat your waffle iron according to the manufacturer's instructions.
- Pour about 1/4 cup of the batter onto the center of the waffle iron and spread it out to the edges.
- Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
- Repeat with the remaining batter.
To make caramelized pineapple:
- 1 ripe pineapple, sliced into 1-inch pieces
- 2 tablespoons unsalted butter
- 1 tablespoon granulated sugar
- In a small skillet, melt the butter over medium heat.
- Add the pineapple slices and cook for about 5 minutes on each side, or until caramelized.
- Stir in the granulated sugar to coat the pineapple.
To assemble:
- Place a cooked waffle on a plate.
- Top with a slice of caramelized pineapple.
- Sprinkle chopped pistachios over the top.
Notes:
- For an extra crunchy topping, sprinkle some chopped pistachios onto the waffles before baking them in the oven (350°F for 5-7 minutes).
- If you want to make this recipe more decadent, drizzle with a caramel sauce or whipped cream on top.
