Lemon Ricotta Waffles

Fluffy waffles infused with the brightness of lemon zest and the creaminess of ricotta cheese.

Lemon Ricotta Waffles

Servings: 4-6

Ingredients:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup ricotta cheese
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons unsalted butter, melted

Instructions:

  1. Preheat your waffle iron to medium-high heat.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, whisk together the sugar, eggs, milk, ricotta cheese, lemon juice, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Add the melted butter and stir to combine.
  6. The batter should still be slightly lumpy.
  7. Cook the waffles for 3-5 minutes or until golden brown.
  8. Serve hot with your favorite toppings, such as fresh berries or whipped cream.

Variations:

  • Add some chopped fresh herbs, like parsley or chives, to the batter for extra flavor.
  • Use different types of citrus zest, like orange or lime, to change up the flavor profile.
  • Top the waffles with a dollop of whipped cream and a sprinkle of powdered sugar for a sweet treat.
