Lemon Ricotta Stroopwafels

A twist on traditional stroopwafels, these lemon ricotta versions add a burst of citrus to the classic Dutch treat.

Lemon Ricotta Stroopwafels

Description These delicious stroopwafels are infused with the bright flavors of lemon and creamy ricotta. Perfect for a sweet breakfast or snack.

Ingredients

For the wafers:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 large egg
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon vanilla extract

For the filling:

  • 1 cup ricotta cheese
  • 2 tablespoons granulated sugar
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1/4 cup confectioners' sugar

Instructions

To make the wafers:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, and salt.
  3. In a separate bowl, whisk together egg, melted butter, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
  6. Use a cookie cutter or the rim of a glass to cut out circles.
  7. Place the wafers on the prepared baking sheet, leaving about 1 inch of space between each one.
  8. Bake for 10-12 minutes, or until lightly golden brown.

To make the filling:

  1. In a small bowl, whisk together ricotta cheese, granulated sugar, lemon juice, salt, and vanilla extract.
  2. Stir in confectioners' sugar until combined.

Assembly

  1. Allow the wafers to cool completely on a wire rack.
  2. Sandwich a spoonful of the filling between two wafers to create a delicious stroopwafel.

Tips

  • To ensure the wafers are crispy, bake them for a few minutes longer if needed.
  • If you want a stronger lemon flavor, add more juice or zest to the filling.
  • These stroopwafels are perfect for snacking, but you can also serve them with hot beverages like coffee or tea.
