Lemon Ricotta Panna Cotta with Fresh Berries

Servings: 6-8

A delicious and light dessert perfect for warm weather. The tanginess of the lemon pairs beautifully with the sweetness of the ricotta and the freshness of the berries.

Ingredients:

  • 1 cup (200g) granulated sugar
  • 2 cups (475ml) heavy cream
  • 1/2 cup (120g) whole milk ricotta cheese
  • 2 large egg yolks
  • 1 tsp (5g) vanilla extract
  • 1 tbsp (15g) freshly squeezed lemon juice
  • 1/4 cup (60g) confectioners' sugar, for dusting
  • Fresh berries (strawberries, blueberries, raspberries), for topping

Instructions:

  1. Make the Panna Cotta:
    • In a medium saucepan, combine the heavy cream, whole milk ricotta cheese, and granulated sugar. Heat over medium heat, stirring occasionally, until the mixture reaches 170°F (77°C).
    • Remove from heat.
    • Stir in the vanilla extract and lemon juice.
  2. Chill the Panna Cotta:
    • Pour the mixture into small individual serving cups or ramekins.
    • Refrigerate for at least 4 hours, or until set.
  3. Top with Fresh Berries:
