Lemon Ricotta Panna Cotta with Fresh Berries

Ingredients:
- 1 cup (200g) granulated sugar
- 2 cups (475ml) heavy cream
- 1/2 cup (120g) whole milk ricotta cheese
- 2 large egg yolks
- 1 tsp (5g) vanilla extract
- 1 tbsp (15g) freshly squeezed lemon juice
- 1/4 cup (60g) confectioners' sugar, for dusting
- Fresh berries (strawberries, blueberries, raspberries), for topping
Instructions:
- Make the Panna Cotta:
- In a medium saucepan, combine the heavy cream, whole milk ricotta cheese, and granulated sugar. Heat over medium heat, stirring occasionally, until the mixture reaches 170°F (77°C).
- Remove from heat.
- Stir in the vanilla extract and lemon juice.
- Chill the Panna Cotta:
- Pour the mixture into small individual serving cups or ramekins.
- Refrigerate for at least 4 hours, or until set.
- Top with Fresh Berries:
- Just before serving, top each panna cotta with a mixture of fresh berries (such as strawberries, blueberries, and raspberries).
- Dust with Confectioners' Sugar:
