Lemon Poppyseed Waffles with Raspberry Coulis

Ingredients:
For the Waffles:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup milk
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons melted unsalted butter
- 1 tablespoon poppyseeds
For the Raspberry Coulis:
- 1 cup fresh raspberries
- 2 tablespoons granulated sugar
- 2 tablespoons water
Instructions:
Make the Waffles:
- Preheat your waffle iron according to the manufacturer's instructions.
- In a medium bowl, whisk together flour, baking powder, salt, and sugar.
- In a large bowl, whisk together eggs, milk, lemon juice, and melted butter.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Fold in the poppyseeds.
Cook the Waffles:
- Pour about 1/4 cup of batter onto the center of the waffle iron.
- Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
- Repeat with the remaining batter.
Make the Raspberry Coulis:
- In a blender or food processor, puree the raspberries, sugar, and water until smooth.
- Strain the mixture through a fine-mesh sieve into a clean bowl to remove the seeds.
- Chill in the refrigerator for at least 30 minutes before serving.
Serve:
- Split the waffles in half horizontally using a serrated knife.
- Top each waffle with a dollop of whipped cream, if desired.
- Spoon the raspberry coulis over the top and serve immediately.
