Lemon Poppyseed Waffles with Raspberry Coulis

A twist on classic waffles, infused with lemon and topped with a sweet raspberry coulis.

Lemon Poppyseed Waffles with Raspberry Coulis

Servings: 4-6

Ingredients:

For the Waffles:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons melted unsalted butter
  • 1 tablespoon poppyseeds

For the Raspberry Coulis:

  • 1 cup fresh raspberries
  • 2 tablespoons granulated sugar
  • 2 tablespoons water

Instructions:

Make the Waffles:

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a medium bowl, whisk together flour, baking powder, salt, and sugar.
  3. In a large bowl, whisk together eggs, milk, lemon juice, and melted butter.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  5. Fold in the poppyseeds.

Cook the Waffles:

  1. Pour about 1/4 cup of batter onto the center of the waffle iron.
  2. Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
  3. Repeat with the remaining batter.

Make the Raspberry Coulis:

  1. In a blender or food processor, puree the raspberries, sugar, and water until smooth.
  2. Strain the mixture through a fine-mesh sieve into a clean bowl to remove the seeds.
  3. Chill in the refrigerator for at least 30 minutes before serving.

Serve:

  1. Split the waffles in half horizontally using a serrated knife.
  2. Top each waffle with a dollop of whipped cream, if desired.
  3. Spoon the raspberry coulis over the top and serve immediately.
