Lemon Meringue Pie Tiramisu

A creative twist on the classic Italian dessert, featuring a lemon meringue pie-inspired ladyfinger layer cake.

Lemon Meringue Pie Tiramisu

Servings: 8-10 people Prep Time: 30 minutes Cook Time: 15 minutes Total Time: 45 minutes

Ingredients:

For the ladyfinger layer cake:

  • 12-16 ladyfingers
  • 1 cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 large egg yolks
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 cup heavy cream, whipped
  • 1 teaspoon vanilla extract

For the lemon meringue pie-inspired filling:

  • 8 ounces mascarpone cheese
  • 1/2 cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 large egg yolks
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 cup heavy cream, whipped

Instructions:

Step 1: Prepare the Ladyfinger Layer Cake

  1. In a medium bowl, whisk together sugar and cocoa powder.
  2. Dip each ladyfinger into a mixture of beaten egg yolks for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
  3. Place a layer of ladyfingers in the bottom of an 8-inch springform pan, trimming them to fit if necessary.

Step 2: Prepare the Lemon Meringue Pie-Inspired Filling

  1. In a medium bowl, whisk together mascarpone cheese and granulated sugar until stiff peaks form.
  2. Stir in unsweetened cocoa powder and vanilla extract.
  3. Spread the mascarpone mixture over the ladyfingers.

Step 3: Prepare the Lemon Meringue Pie-Inspired Topping

  1. In a medium bowl, whisk together egg yolks and granulated sugar until stiff peaks form.
  2. Stir in unsweetened cocoa powder and vanilla extract.
  3. Spread the whipped cream mixture over the mascarpone layer.

Step 4: Assemble the Tiramisu

  1. Sprinkle powdered sugar over the top of the ladyfingers.
  2. Top with a generous helping of whipped heavy cream.
  3. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Notes:

  • Traditionally, tiramisu is made with espresso-soaked ladyfingers; however, we've chosen to feature lemon meringue pie-inspired flavors instead.
  • This dessert can be served chilled or frozen for a more intense flavor experience.
