Lemon Lavender Panna Cotta with Honeyed Almonds

Ingredients
For the Panna Cotta:
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 1/4 cup granulated sugar
- 2 tbsp dried lavender buds
- 2 lemons, zested and juiced
For the Honeyed Almonds:
- 1 cup sliced almonds
- 2 tbsp honey
- 1 tsp grated lemon zest
- Pinch of salt
Instructions
Make the Panna Cotta:
- In a medium saucepan, combine heavy cream, whole milk, and granulated sugar.
- Heat over medium heat until sugar dissolves.
- Add vanilla extract, lavender buds, lemon zest, and lemon juice to the mixture.
- Bring to a simmer, then reduce heat to low and let steep for 10-15 minutes.
- Strain mixture through a fine-mesh sieve into a clean bowl. Discard solids.
- Pour mixture into small individual serving cups or ramekins.
- Refrigerate until set, at least 4 hours.
Make the Honeyed Almonds:
- In a small saucepan, combine sliced almonds and honey.
- Place over low heat and stir constantly until honey caramelizes, about 5 minutes.
- Remove from heat and stir in lemon zest and salt.
- Let cool completely before using as garnish.
Assemble the Dessert:
- Spoon set panna cotta into individual serving dishes or glasses.
- Sprinkle toasted almonds on top of each serving.
- Serve chilled, with additional honeyed almonds on the side if desired.
