Lemon Lavender Panna Cotta with Honeyed Almonds

A refreshing dessert featuring lemon and lavender panna cotta topped with crunchy honeyed almonds.

Lemon Lavender Panna Cotta with Honeyed Almonds

Ingredients

For the Panna Cotta:

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar
  • 2 tbsp dried lavender buds
  • 2 lemons, zested and juiced

For the Honeyed Almonds:

  • 1 cup sliced almonds
  • 2 tbsp honey
  • 1 tsp grated lemon zest
  • Pinch of salt

Instructions

Make the Panna Cotta:

  1. In a medium saucepan, combine heavy cream, whole milk, and granulated sugar.
  2. Heat over medium heat until sugar dissolves.
  3. Add vanilla extract, lavender buds, lemon zest, and lemon juice to the mixture.
  4. Bring to a simmer, then reduce heat to low and let steep for 10-15 minutes.
  5. Strain mixture through a fine-mesh sieve into a clean bowl. Discard solids.
  6. Pour mixture into small individual serving cups or ramekins.
  7. Refrigerate until set, at least 4 hours.

Make the Honeyed Almonds:

  1. In a small saucepan, combine sliced almonds and honey.
  2. Place over low heat and stir constantly until honey caramelizes, about 5 minutes.
  3. Remove from heat and stir in lemon zest and salt.
  4. Let cool completely before using as garnish.

Assemble the Dessert:

  1. Spoon set panna cotta into individual serving dishes or glasses.
  2. Sprinkle toasted almonds on top of each serving.
  3. Serve chilled, with additional honeyed almonds on the side if desired.
